Weight-in Wednesday- Banana Bread Pancakes

Last night I noticed I had several bananas that were coming to the end of their life. If I waited another day they would be chicken food for sure. So I had to do something with them. I started looking up banana bread recipes. I love banana bread. But I hate waiting for it to cook. I’m all about instant gratification. Waiting 45 minutes is ridiculous in my book.

Then I came upon this recipe. It was like the heavens were opening up for me!

The recipe called them “Banana Fritters” but I’m changing the name. This came from my favorite cookbook, Fix-It and Enjoy-It 5-Ingredient Recipes by Phyllis Pellman Good. I pick recipes by the number of ingredients first and then the number of steps to make it. If the ingredient list is longer then 8 items, I’m probably not going to make it!! So this recipe book is PERFECT! It also has a lot of “semi” home-made recipes, where you use a pre-made/store bought item and use it to make a new meal. Awesome.pancakes2

So here is how this great recipe works. Mix together:

1 Large Banana-mashed                    1 Tbsp Sugar                    3 Tbsp Flour

Then beat 1 Egg with 1/2 tsp Baking Soda, pour that in with the other ingredients.

Mix all together until smooth.

In a skillet heated to a medium heat (my stove was set on 4), drop in 1-2 Tbsp size scoops. Fry until light browned, flip and brown the other side. Just like cooking pancakes. However these cook faster then regular pancake mix. It you wait for them to form bubbles in the batter, you’ve waited too long.

Sprinkle with a little sugar and enjoy. (They need a little extra sweetness)

After the first batch I made, and loved, I made more! I quadrupled the recipe (I had 4 more bananas) and it all worked out great. I then too the left over pancakes and stuck them in the freezer. This makes for a super easy breakfast for Josiah in about 20 seconds. Just pull out a couple, microwave them for 20-25 seconds and go! He’s a big fan!!
